The explanation is in the name! This is a sauce to make and serve with any simply prepared protein (think grilled, baked, or seared). It can be adapted to use whatever vinegar, sweetener, and herbs you have on hand, and if you are serving more than 1 or 2 people, the recipe can easily be scaled up.
What you'll need:
- 2 Tbsp. olive oil
- 1 small shallot, finely chopped (or 1/4 small onion)
- 2 medium peaches, chopped (about 2 cups)
- 2 Tbsp. vinegar (whatever you have on hand)
- 1 Tbsp. honey, agave, light brown sugar, or granulated sugar
- 1/4-1/2 tsp. kosher salt
- 1/8 tsp. fennel seeds
- 1/8 tsp. crushed red pepper, optional
- 1-2 tsp. chopped fresh herbs (whatever you have on hand)
Instructions:
- Heat olive oil in a medium skillet over medium.
- Add shallot, and cook, stirring occasionally, until beginning to soften, about 2 minutes.
- Add peaches, vinegar, honey, fennel seeds, salt to taste, and crushed red pepper, if desired.
- Cook over medium, stirring often and lightly mashing peaches with a spoon, until peaches begin to break down and thicken, about 5 minutes.
- Remove from heat, and stir in herbs.
