Peach, Grapefruit & Kiwi Salad

This vibrant salad bursts with color and sunshine. Juicy grapefruit, sweet peaches, and tangy kiwi come together under a zesty citrus dressing infused with fresh ginger and turmeric. Finished with flaky salt and mint, it’s a refreshing side or light dessert that feels as energizing as it tastes.
Serves: 4-6
Ready in: 15 minutes
Ingredients:
- 1 teaspoon fresh ginger, grated and peeled
- 1 teaspoon fresh turmeric, grated and peeled
- ⅓ cup fresh orange juice
- 2 tablespoons fresh lime juice
- 4 tablespoons olive oil
- ¼ teaspoon kosher salt
- 2 large red grapefruit, peeled and sliced
- 2 large peaches, cut into thin wedges
- 2 kiwi, peeled and chopped
- Flaky sea salt, to taste
- Mint leaves, to taste
Instructions:
- For the dressing, whisk together the grated ginger, turmeric, orange juice, lime juice, olive oil, and kosher salt. Set aside.
- Arrange grapefruit, peaches, and kiwi on a large platter, or on individual plates.
- Drizzle with dressing, and sprinkle with flaky salt and mint leaves. Serve.
Tips: Chill the fruit and dressing separately before combining! Cold fruit holds its shape better, and the chilled dressing gives a refreshing “zing” when poured over right before serving. This also helps the ginger and turmeric flavors stay bright instead of mellowing too much.
