Peach Beer Cocktail

This easygoing peach beer cocktail tastes like summer afternoons on the porch - bright, bubbly, and just sweet enough. Fresh peaches and a splash of vodka turn a few cold beers into something special, the kind of drink you share with neighbors when the day’s work is done and the sun’s starting to dip low.
Makes: 6 ½ cups
Ready in: 1 hour
Ingredients:
- ⅓ cup sugar
- ⅓ cup water
- 1 large peach, chopped (approx. 1 ¼ cups)
- One 3 inch strip of lemon peel, washed
- Three 12 ounces fruited beers, chilled
- ½ cup vodka, chilled
- ¼ cup lemon juice
- 1 peach, thinly sliced
Instructions:
- Combine sugar, water, chopped peach, and lemon peel in a saucepan. Bring to a boil over high heat, smashing with a potato masher to crush peaches and dissolve sugar. Let cool to room temperature, then strain, pressing on solids. Discard solids. Cover and chill until ready to use.
- Add peach syrup, vodka, beers, and lemon juice to the syrup in a pitcher. Serve over ice with sliced peaches in the glasses.
Tip: Chill your pitcher and glasses in the freezer for 10-15 minutes before serving. This keeps the beer fizzier, the vodka punchier, and the peach flavor brighter!
