Peach Aperol Spritz

A sunlit twist on the classic Aperol spritz, this version sparkles with the sweetness of ripe peaches and the bite of prosecco. The homemade peach syrup adds a lush, golden depth that makes every sip taste like summer - refreshing, effervescent, and just the right amount of indulgent!
Serves: 1
Ready in: 15 minutes
Ingredients:
- 2 ounces Aperol
- ½ ounces peach simple syrup
- 1-2 ounces chilled club soda, to taste
- 3 ounces chilled prosecco
- 1-2 fresh peach slices
Peach Simple Syrup:
- 2 medium peaches, pitted and cut into wedges
- 2 tablespoons lemon juice
- 1 ½ cups granulated sugar
- ½ cup boiling water
Instructions:
- Place the peaches in a medium microwave-safe glass bowl. Pour the lemon juice and sugar on top (do not stir) and cover very tightly with plastic wrap, wrapping it all the way around the bowl to seal in the steam while cooking. Microwave on high for 5 minutes.
- Remove the plastic wrap carefully, so as not to burn yourself on the steam. Stir well. Cover and repeat the process until all the sugar has been dissolved.
- Strain the syrup through a fine-mesh strainer into a medium bowl to remove the solids. You can save the peaches to use as a jam. Whisk in the boiling water and transfer the syrup to a jar. Allow to completely cool. Cover and refrigerate the syrup until needed, up to 1 month.
- Pour all of your ingredients together in a wine glass. Stir to combine, and enjoy.
Tip: Freeze thin peach slices ahead of time and use them in place of ice cubes. They’ll keep the drink cold without watering it down, and as they thaw, they infuse even more peach flavor into your spritz!
