Easy Peach Jam

When you have peaches that are over-ripe, why not turn them into a jam that can be enjoyed for weeks? 


Makes:
2 cups

Ready in: 20 minutes

 

Ingredients:

  • 1 ¼ pounds very ripe peaches, quartered (about 3 medium peaches)
  • 1 cup granulated sugar
  • 3 tablespoons fresh lemon juice

 

Instructions:

  1. Place peaches, sugar, and lemon juice in a heavy-bottomed, non-reactive pot. Then, mash with a potato masher.
  2. Bring to a boil over medium-high heat, stirring often.
  3. Cook for 10 minutes, stirring often, until thickened and jammy. To test if the jam is done, spoon a small amount on a small plate, and freeze for 1 minute. After 1 minute, tilt the plate. If the jam runs off quickly and easily, it's not quite done.
  4. Cool to room temperature, then spoon into jars, cover, and refrigerate. Jam will last for up to a month in the refrigerator.



Tip: To amplify that summer peach flavor, add a teaspoon of vanilla extract or a pinch of ground cinnamon during cooking!
