Easy Peach Jam

When you have peaches that are over-ripe, why not turn them into a jam that can be enjoyed for weeks?
Makes: 2 cups
Ready in: 20 minutes
Ingredients:
- 1 ¼ pounds very ripe peaches, quartered (about 3 medium peaches)
- 1 cup granulated sugar
- 3 tablespoons fresh lemon juice
Instructions:
- Place peaches, sugar, and lemon juice in a heavy-bottomed, non-reactive pot. Then, mash with a potato masher.
- Bring to a boil over medium-high heat, stirring often.
- Cook for 10 minutes, stirring often, until thickened and jammy. To test if the jam is done, spoon a small amount on a small plate, and freeze for 1 minute. After 1 minute, tilt the plate. If the jam runs off quickly and easily, it's not quite done.
- Cool to room temperature, then spoon into jars, cover, and refrigerate. Jam will last for up to a month in the refrigerator.
Tip: To amplify that summer peach flavor, add a teaspoon of vanilla extract or a pinch of ground cinnamon during cooking!
