Blackberry Peach Salad

 

This bright, summer salad lets juicy, sun-ripened peaches shine. Their natural sweetness pairs beautifully with tangy goat cheese, peppery arugula, and a light honey-Dijon dressing - a fresh, flavorful bite of the season in every forkful!

 

Serves: 4

Ready In: 10 minutes

 

Ingredients:

  • 3 tablespoons apple cider vinegar
  • 3 tablespoon minced shallot
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • ½ teaspoons black pepper
  • cup olive oil
  • 5 ounces arugula 
  • 1 peach, sliced (about 1 ½ cups)
  • 1 cup fresh blackberries
  • 2 ounces crumbled goat cheese
  • ½ cup honey-glazed almonds, chopped


Instructions:

1. Whisk together vinegar, shallot, chives, mustard, honey, salt, and pepper in a large bowl. Gradually whisk in olive oil until combined.

2. Add arugula, peach, blackberries, goat cheese, and almonds, then toss to coat. Serve immediately.

 

Tips:

This dressing can be made ahead and stored in the fridge for up to 3 days! Let it warm up a bit at room temperature before using.
